Wayfarer Bread is beyond excited to host our dear friend and renowned baker (and James Beard Award Finialist!) Graison Gill for a hands-on, whole grain baking class October 20-21. We will be working exclusively with local flavors and flours in this two-day class to learn about stone milling, sourdough maintenance, and how to combine the best ingredients for the most delicious results.

Our Menu:

  • Roasted Heirloom Corn Baguettes (Cacahuazintle hominy from Rancho Gordo) with Heirloom Sonora Flour

  • CA Macadamia Nut, CA Date and Mexican Chocolate Couronne

  • Whole Grain Country Sourdough with freshly stone milled from Local Los Angeles Mill Grist & Toll

  • Toasted CA Wild Rice and Dried CA Seaweed Country Tin Loaf

  • Whole Grain Spelt Brioche with pastry cream and fresh fruit; drizzled with Arizona Prickly Pear Syrup and Mexican Vanilla

About the Baker:
Graison Gill has been baking and milling for 15 years and has taught around the world. His passion for ecology, foodsystems, nutrition, and craft made him a finalist for a James Beard Award as the country's best baker in 2020.
